Health Clicks: Recipe Round-Up - Springtime Brunch




Easter, graduations, baby showers, wedding showers - all great reasons to host a springtime brunch. But, you don't need any of those special occasions to do it either.  Go ahead, open the doors and let that spring air in, plug in your iPod, and create a beautiful brunch for yourself, your special ones or even a crowd.





Healthy Brunch Dishes

Keep it as simple or as elaborate as you want it.  But, keep it healthy and yummy at the same time with some of these recipe links to inspire you to do just that:


1.  Get a bit festive and start things off with a refreshing cocktail, of course.  Here is a virgin one that could not be simpler and it is pretty, too!




2.  What is a brunch without eggs? Our vegan friends may beg to differ, but we will have other choices here too.  Eggs are great sources of iron, vitamin A, folate and the brain fortifying choline. There are so many egg choices to buy out there, though, so find out which kind are best here.  Impress your guests with this easy and beautiful cheese souffle at your next brunch or this scrumptious tomato clafoutis or kick it up with this kimchi omelet.


3.  This one is vegan friendly as well as Southwest and avocado friendly.  How cute would this be served in those mini cast iron skillets?


4.  Here is another recipe easily adaptable with some subs for our vegan pals and everyone else too: a healthy waffle!  Nope, that is not an oxymoron.  Apparently, they can go together with this highly-rated recipe.


5.  Want something more substantial? Salmon is loaded with omega 3s.  Here is a cinch of a one to prepare partially ahead.


6.  Sides are my favorite. A few tasty vegetables most will love: a potato salad with Italian influences, an asparagus-caesarand a maybe even a strawberry salad with chickpeas.


7.  Go ahead and make a dessert but do it ahead so that you can relax and join in the great conversation. Chocolate and almonds are delightful together and so is this sweet little number.
